Notes Suitable for vegetarians. Despite the name, it contains no (added) sugar.
Trivia Some of the Chinese eaters remarked that this dish reminded them of home. Apparently a similar rice dish is popular in some regions of China.

Ingredients (serves 4-6)

Preparation

  1. Bring the water for the rice to boil. (If you want to make the rice slightly sticky, use more water than you would normally do.)
  2. Meanwhile, lightly fry the garlic and coriander seeds. Add the rice, pilau rice mix, and the bay leaves and stir-fry for 1-2 minutes.
  3. Add the boiling water and cook the rice until done. For a slightly sticky result, overcook for 1-2 minutes. Drain if necessary (I normally use just enough water to have it all absorbed by the rice by the time it's done).
  4. Mix the sultanas and salt through the rice, stirring the rice grains loose while mixing, then rest for a few minutes and serve.
