Trivia I am not certain of the origins of this recipe; it is probably a mixture of Indonesian and Chinese dishes.

Ingredients (serves 4)

Preparation

  1. Slice or cut the chicken breasts, then fry for a few minutes in the vegetable oil.
  2. Add the chopped onion and fry until golden.
  3. Add the mushroom slices and the ginger, then fry for a few more minutes.
  4. Add the tomato puree, the soy sauce, vinegar and some water (200 ml) to make a smooth sauce.
  5. Simmer for a few minutes until the chicken is well done. Add the bamboo shoots, then add sugar to taste.
