Trivia To create an easy Chicken Tandoori, use the same general procedure but marinate with tandoori masala (ready-made mixture) and yogurt.

Ingredients (serves 4-6)

Preparation

  1. Mix the ginger, garlic, coriander, cumin, and chilli in a large bowl. Add the yogurt, salt, lemon juice, food colouring, and tomato puree and mix thoroughly.
  2. Add the cubed chicken and mix to ensure that the chicken is covered with the yogurt and spice mixture. Leave to marinate for at least 3 hour, or even overnight.
  3. To finish off this dish, start by preheating an oven grill for at least 10 minutes until red hot.
  4. Place the onion slices in an ovenproof dish and sprinkle some oil over them. Arrange the marinated chicken pieces on top and place under the grill. After 10-15 minutes, turn the pieces of chicken and cover with some more oil, then grill for another 10-15 minutes.
