Ingredients (serves 6-8)

Preparation

  1. Soak the rice in cold water for about 2 hours, drain, then cook with fresh water until done.
  2. Drain the rice (if necessary) and mix the oil through the rice.
  3. In a suitable bowl, make a layer of half the rice and smooth the top. Add the black bean paste as a layer on top of the rice, then use the remaining rice for a final layer.
  4. Finish by arranging the sliced apricots, cherries, and perhaps other fruit in a nice pattern on top.
